Parmesan Spring Chicken Ingredients
- 5 tbsp. finely grated parmesan
- 4 boneless, skinless chicken breasts
- 3/4 lbs potatoes, cut into small cubes
- 1 2/3 cups frozen peas
- good handful baby spinach leaves
- 1 tbsp white wine vinegar
- 2 tsp olive oil
- 1 egg white

Parmesan Spring Chicken Recipe
As we head into Spring, we thought it appropriate to give out a light and fresh recipe. For our Parmesan Spring Chicken, we'll need to heat the grill to medium and line a grill pan with foil.
Next we'll take the egg white and beat it with a little salt and pepper in a bowl. Put the grated parmesan into another bowl. Now we'll take the chicken and dip it into the egg white first, then the cheese.
You'll want to grill the coated chicken for 10-12 minutes, turning once until browned and crisp.
Let's not forget about the potatoes! Boil these guys for about 10 minutes and add the frozen peas for the final three minutes. When time is up, drain the whole pot.
Toss the potatoes and peas with the spinach leaves, adding vinegar, oil and seasoning to taste. Divide between four warm plates and then place the chicken and enjoy!
